Prepare garlic in advance

Prepare garlic in advance and save the trouble, time and 'smelly' fingers associated with its preparation. Using a rubber garlic peeler clean the skin off 15 or 20 large cloves of garlic. Drop them into a small bowl chopper and whizz for 20 seconds. Transfer the finely chopped garlic to a small glass jar that has a tight fitting lid. Pour in enough white wine vinegar to just cover fit lid and store in the fridge.
Use a teaspoon to transfer sufficient to your saucepan and use as for fresh garlic. The wine vinegar will evaporate away and so will not change the flavour! Easy isn't it?
